This oatmeal is loaded with carrots, red beans, smoked paprika and other savory spices to create an absolutely delicious and comforting dish.

Here’s the rough recipe:
(Serves 2)
INGREDIENTS
1 cup old fashioned oats
2 cups water
Salt, pepper, chili powder, cumin, smoked paprika, onion and garlic powders to taste
2 Tablespoons nutritional yeast
1/2 cup shredded carrots
1/2 cup cooked red beans
Toppings: pico de gallo, fresh jalapeño slices, avocado slices, lime slices, cilantro
DIRECTIONS
1. Bring water to boil then stir in oats. Reduce temperature to medium high heat then add carrots and spices and cook for about 4 minutes.
2. Add red beans and nutritional yeast then taste and adjust seasonings as necessary (I estimate I used about 1/2 teaspoon of everything except pepper; about 1/4 teaspoon pepper).
3. Cook for another 2 minutes or until oats are tender and beans are heated through.
4. Split oatmeal mixture between two bowls then add toppings as desired. Serve warm.
