No Tuna Salad

This super easy salad comes together in mere minutes and is a perfect hot-weather dish.



I love this vegan No Tuna Salad for dinner.  It is super scrumptious. It reminds me of a chicken salad recipe of my aunt’s that has cream cheese in the mix - yeah it's that creamy and rich, due to the avocado. I went low-carb with it by eating it in a cucumber half. The cucumber added even more of a light, fresh taste. This super easy salad comes together in mere minutes and is a great meal in the heat of summer.


RECIPE

1 15 oz can chickpeas, processed fine in a blender or food processor 

1 avocado

Juice from 1/2 lime

1/4 cup scallions

2-3 Tbsp chopped cilantro

Dash of chili powder to taste

Salt to taste 

Mix all ingredients well until smooth and blended.
