High Protein Chocolate Chia Overnight Oats with Pumpkin Spice Caramel

These creamy oats are loaded with plant protein and are bursting with flavor.

Chocolate Chia Overnight Oats with Pumpkin Spice Caramel, Almonds, Cranberries and Pumpkin Seeds

For the oats

1/2 cup old fashioned oats

1/2 scoop protein powder (I use PlantFusion Inspire For Women, Vanilla Bean Flavor) *

1 to 1-1/2 Tablespoons cacao powder (I use Zeal Superfoods) *

1 Tablespoon chia seeds

1/2 Tablespoon maple syrup (or favorite sweetener)

3/4 cup plant milk


Blend all ingredients and let sit in fridge for 2 hours minimum or overnight.


For the caramel

1/4 cup almond butter

2 Tablespoons maple syrup

2-1/4 teaspoons pumpkin pie spice

1/8 teaspoon vanilla


Blend all ingredients in a small bowl. Thin to desired spreading consistency with a little hot water. Spread desired amount over oats and store any leftovers in fridge. You may want to reheat the caramel to soften it after refrigerating.


Top oats with chopped almonds, cranberries and pumpkin seeds.
